How the Book Was Conceived

After being diagnosed with Lyme disease, Laura wanted to learn as much as she could about the illness, so she read many books on the subject, including The Lyme Disease Solution. She was intrigued by the Lyme Inflammation Diet® introduced by the book and wanted to give it a try. However, being accustomed to a dairy- and carbohydrate-rich diet (food groups not permitted until Phase 3), she hesitated.

Laura called her mother, Gail, for some help. Using the list of Phase 1 foods, Gail created several delicious-looking recipes and sent them to Laura, who realized following the anti-inflammation diet was not going to be so challenging after all.

After a few days of satisfying and tasty meals, Laura came up with a great idea! Considering both her and her mother's professions, she felt that together they could use their skills to create a cookbook filled with delicious and nutritious meals.

Laura contacted Dr. Singleton to see if he had ever considered publishing a cookbook specific to his anti-inflammation diet. A few weeks later, she heard from him that he and his wife, a nutritionist, had been considering the exact same idea, even before receiving her letter. Many excited conversations followed, and the eventual outcome was Recipes for Repair: A Lyme Disease Cookbook.

Gail Piazza

Gail Piazza is a home economics consultant with a Master's degree in Food and Nutrition. For over thirty years, she has developed and tested recipes and styled food for movies, television commercials, print ads and packaging for an extensive list of high-profile clients. In addition to authoring a cookbook herself (The World of Wok Cookery), she has also collaborated on a half-dozen other cookbooks, and worked with small appliance designers to refine and test their products. Some of her clients include All-Clad, Emerilware, Krups, Farberware and Lenox Corporation.
